Mom's Catfish with Bok Choy dish

 

Marinate fish with
 ginger juice and soy

(get ginger juice by cutting about a thumb size piece of ginger then bruising it with the back of a knife...once it's bruised... squeeze over fish or you can grate ginger and add to fish)

Stir fry bok choy with salt - plate and make a bed for fish to go on

in oil, stir fry green onions -white parts first, then greens
Then add marinated fish
When opaque, add gravy mixture (corn starch, soy, sugar,water)
When done, put over bok choy
